Kale Salad

This quick and easy Kale Salad recipe is made with fresh kale, sweet apples, sunflower seeds, sharp white cheddar, and a delicious lemon vinegarette. Now, who said you shouldn’t enjoy healthy food!?

SERVES: 8
TOTAL PREP TIME: 20 minutes

INGREDIENTS

1/2 cup olive oil
2 Tbsp fresh lemon juice
2 Tbsp apple cider vinegar
2 Tbsp all-natural maple syrup
1.5 tsp dijon mustard
Salt and freshly ground black pepper to taste
1 lb. curly kale (about 2 large bunches)
1 large (9 oz.) apple, recommend gala, julienned
1 cup *2 medium carrots, shredded
3/4 cup unsalted sunflower seed meat, toasted
3/4 cup shredded sharp white cheddar cheese (vegan or dairy, it’s up to you!)
1/3 cup thin-sliced red onion

METHOD

Whisk together olive oil, lemon juice, apple cider vinegar, maple syrup, dijon mustard in a mixing bowl. Season with salt and pepper to taste before letting it rest in your fridge while you prepare the salad.
Remove the kales leaves from its thick ribs. Rinse the leaves and dry well. Working in batches on a cutting board, gather and bunch kale leaves together and thinly slice creating ribbons.
Transfer kale to a very large bowl along with apples, carrots, sunflower seeds, cheese and red onion.
Whisk dressing again then pour over salad. Toss well to evenly coat. Serve within a few hours for best results.
